This burger will be the best burger you will ever ever enjoy - promise!
It does require a tad more prep than most of our ‘throw together’ recipes, but it’s so worth it.
When we make these burgers we always make a big batch. The mushroom & eggplant patties will last in the fridge for a few days afterwards, so you can use them again, these are brilliant to serve up for a nice gathering at your home to impress all the people and they are also amazing because you can make the patties a day before a big party, taking away from all the other work involved in a wonderful gathering at your home. Super easy, super yum - just bloody brilliant really.
This recipe will make 10 burgers, great for BBQ get-together.
Half the recipe for a family meal.
3 eggplants, washed and cut (see photos for size)
10 big brown mushrooms, washed, stalks cut off
Garlic - lots of it
Enough olive oil to deeply marinade the eggplant & mushrooms
Tasty cheese - cut into thickish slices
Brioche burger buns
1 red onion, thinly sliced
Avo - sliced
Baby spinach
Sauce - aioli, mayonnaise, ketchup, whichever sauce tickles your fancy
Cut the eggplant into thick slices & cut the stalks off the mushrooms, marinade them in a lot of olive oil, as much garlic as you love, salt & pepper
The key for these burgers is to BBQ your mushrooms & eggplant, giving them a slight char and incorporating the smoke from the BBQ to create a beautiful smokey flavour. Cook the eggplant & mushrooms until soft & golden brown. We normally cook them slowly for at least 30 - 40 mins turning every 5 mins or so.
Once they are all cooked, transfer the mushrooms to an oven tray.
Place pieces of eggplant on top of a mushroom to create a patty & place cheese on top.
Put into the oven and melt the cheese onto your patty.
Lightly toast the buns on the BBQ or in your oven.
Then you just put your burger together with spinach, avo, mayo & onion
