Tonight for dinner we made our signature roasted pumpkin & black bean lasagna, served up with a fresh rocket salad. Not only is the lasagna truly delicious, but the combination is a total winner!
1/2 a pumpkin, skin removed and chopped up into 1cm thick slices
Whole clove of garlic (2 if you are garlic crazy like us)
2 cans of black beans (or beans of your choosing) strained and rinsed
1 can of chopped tomatoes
2 tablespoons of tomato paste
1 teaspoon of vegemite
1 onion chopped up
Dried or fresh herbs of your liking, salt & pepper
1 packet of sheet lasagna
2.5 cups of tasty grated cheese
1 cup grated parmesan
2 tablespoons flour
3/4 litre of milk
Smother the pumpkin in olive oil, salt & pepper & garlic and roast until it’s ready.
Place the 2 cloves of garlic in the pan with the pumpkin and roast it. Once it’s roasted, set the garlic aside until it cools, and then can squeeze it out of the clove like garlic paste.
To make the sauce, fry the onion & garlic in a pan with oil until golden. Add in as many herbs as you fancy, salt & pepper, & your can of tomatoes. Also add in vegemite, tomato paste & other flavours you fancy. This will be your sauce, so you can tinker with it as you please.
Make your cheese sauce while the sauce is simmering.
In a pot, melt the butter and add in the flour, stirring lots until it almost bubbles. It should be a thick consistency, add more flour / butter until its thick. Then add in your milk. Heat this up until it boils while stirring the whole time, it will thicken up once it boils. Remove from the heat and add in cheese and stir until its combined - set aside.
Once the pumpkin has roasted, you are ready to layer it all up.
Use a flat deep dish and smear some sauce on the bottom first and layer pumpkin, cheese sauce, tomato sauce, garlic paste, pasta and so on until all is used up. Make the last layer cheese sauce as it looks nice on top.
Cook for a good 40 - 60 mins on 180 deg
Served up in cheap as chips op shop home-wares that looks a million dollars and were probably being used in the 70's
Always make enough to freeze for a few meals!
